Spiced apricot bites

Okay, so I don’t know about you, but I’m over summer and the humid Virginia weather. I’m ready to pull out my Uggs and sweaters and  sit out by a bonfire on a cool fall night. Don’t even get me started on Thanksgiving! The delicious comfort foods, family and desserts galore! Ugh! I’m impatiently waiting and planning menus already, #fatkid status. Being that it is only mid august, I need to pump my brakes and chill. Today I decided to make a summer/fall dessert compromise. This dessert uses apricots which are summery, and it’s paired  with fall-like spices. For my vegan peeps you can enjoy this dessert too, just substitute the gelatin for agar-agar ;). These turned out so well, and are so easy  that I plan to make these for thanksgiving, but use pumpkin or sweet potatoes. Here’s what I used…

2 cups sliced apricots
1/2 cup of sugar
1 cinnamon stick
1 tsp key lime juice
1/4 teaspoon allspice
1 tsp Vanilla extract
1 tsp Cardamom
1/2 pistachios (for topping)
unflavored gelatin

First slice the apricots about 1/4 inch thick. Combine all ingredients except gelatin and pistachios. Simmer for 15 minutes. Stir constantly and mash apricots to fully incorporate. 

While the apricots cool, take this time to prepare the gelatin according to the directions. Combine gelatin and spiced apricot, place into mold and refrigerate for 3- 4 hours. Just before the gelatin fully sets, place the chopped pistachios on top for some added flavor and texture. BOOM! take a bite of fall and thanksgiving all wrapped in one tiny bite.
