Flaxseed Crackers

Did you know flax seeds are powerhouses of awesome packed in a tiny seed? This seed can cure colds, unclog arteries, help with constipation and even be used as a hair gel! Yes, hair gel, look it up. I’m not using it for any of those things today, I just wanted to let you know in case you didn’t already. I’m using it because I wanted a super easy nutrient packed snack. I love to snack but my waist hates it. So why not compromise and give us both what we want. Crunch, healthy and tasty? Yes please! SN these seeds are super absorbent. I was tempted to just keep adding water to see how much they’d absorb. Despite how much I wanted to, I surprisingly stayed focused and made the recipe without distraction.  Here’s what I used…

Ingredients:
2/3 cup of flaxseed
1/4 cup Chia seed
chopped garlic
smoked paprika
nutritional yeast
cilantro
rosemary
dill
onion powder
3 cups warm water

First pour flaxseeds and chia seeds into a large bowl and cover with water. Stir and let sit over night or until the seeds have soaked up all the water. By the morning, the flaxseeds will have produced a gel that acts as the binding agent for the “dough”.

 

Now add the seasonings and thoroughly mix together.

Next place dough into silicon mold or spread out on a cookie sheet. Make sure the mixture is spread evenly and about 1/8 of an inch thick. Fill in any holes the at may form. Bake at 395 for 20 minutes. Periodically check so that it doesn’t burn.

Let the crackers cool then cut into fourths. Enjoy your crunchy nutrient dense snacks! These would go great with some tzatziki sauce! Let me know in the comments what your Favorite snack is.
