Okay, so I haven’t really been doing a lot of cooking lately… I just haven’t felt like it. When summer hits I just want quick and easy food (which normally means take-out). I had to almost force myself to make muffins. Curiosity got the best of me and I wanted to find out how strawberries and key limes tasted together. I also wanted to make a healthier treat so I’m trying out almond meal as well. Here’s what I used…
1 cup chopped strawberries
1 cup almond meal
2 tbs coconut flour
1 tsp baking powder
1/8 tsp salt
2 tbs key lime juice
1/4 cup melted butter
First, mix the wet and dry ingredients in separate bowls until fully incorporated.
Mix wet and dry ingredients together and pour into muffin pan. Set oven to 375 degrees and bake for 15-20 minutes. I placed a sheet pan under my silicone pan to help it keep its shape and to make it easier to remove from the oven when it’s done.
Muffins are ready when a toothpick can be inserted and come out clean.
That’s it! I’ll probably make these again, but next time add cream cheese and sugar. It has really been one of those weeks that I just couldn’t be bothered honestly. Real life happens, but next week will be better. Peace and love everyone!!
