7-Up Cake

Okay, so I’m the furthest thing from a baker. I don’t have the attention span most days to measure out all the ingredients perfectly, and mise en place?! No just no! But then I got a stand mixer and turned into Martha Stewart, for like a day. While pretending to be Martha I came across a 7-up cake recipe that I wanted to try. Seeing as though I was only pretending to be Martha, I didn’t fully follow the recipe and I made some tweaks to it. I say it turned out pretty good. Here’s what I used…

Ingredients:

Lemon cake mix
3/4 cup vegetable oil
instant vanilla pudding (1pkg)
1 1/4 cup 7-up soda
4 eggs

Frosting ingredients
1 stick of butter
1 can of crushed pineapples (20 oz)
2 eggs
1 cup sugar
1 1/2 cup of flaked coconut
2 Tbs all purpose flour

Preheat the oven and combine the wet ingredients; eggs, oil and 7-up soda. Then add cake mix and instant pudding mix. whisk until smooth.

Spray two cake pans with cooking spray and divide the cake batter evenly. Bake according to box directions.

While cakes cool start on the frosting. On medium heat, melt the butter and mix in sugar. Then add remaining frosting ingredients while stirring constantly. When the frosting comes together it’s ready.

 

Let the frosting cool slightly to make it easier to work with. Frost both cakes then stack them. Keep the cake refrigerated, it’s super moist and can spoil faster. Slice and enjoy! I don’t even like coconut that much but I’ll eat this frosting. Somehow the coconut and pineapple work really well together. Let me know in the comments if you like coconut.
