Elotes are a Mexican street food, but I prefer to call it grilled deliciousness. This recipe calls for Mexican crema which is like sour cream’s tastier cousin on steroids. There’s a tangy salty combo that pairs perfectly with the sweetness of the grilled corn. Elotes are so easy to make and tasty that I don’t want to belabor the topic. Let’s get to the good stuff! Here’s what you’ll need…
1/2 cup Mexican crema
1 tsp Paprika
1 tsp Chili Powder
Salt & Pepper to taste
1/4 cup Mayonnaise
1 cup Cojita cheese
Okay so transparent moment, I learned something when I made these. When using skewers on the grill soak them first! They will burn quickly if you don’t. I’m sure that seems obvious, but it wasn’t obvious the first time I grilled. For some reason, I thought the skewers were treated or something. Anyway back to the recipe!
First, skewer the corn with Soaked skewers like so…
Next, place the corn on a hot grill and be sure to watch it and turn it often to ensure you get a good char all over.
Now blend all ingredients in a bowl large enough to roll the corn in. Roll the corn in the mixture then sprinkle with the Cojita cheese. Of course by “sprinkle”, I mean dump the cheese all over the corn. Sprinkle is too soft of a word. Cover the corn with this amazing salty goodness, then enjoy! Have you ever tried Mexican crema?
