I first tried Irish potato candy when I was in college. A classmate at the time brought this dessert in for culture day. This little dessert is so decadent and delicious! Despite the name this dessert has no potato in it. The shape and cinnamon cocoa coating give them the brown look of a potato. Cocoa isn’t normally used but I’m not a huge fan of cinnamon on it’s own, so I added cocoa to give it that extra something. So any-who happy st. Patrick’s Day and here’s what you’ll need…
7 oz of flaked coconut
8 oz package of softened cream cheese
2 cups powdered sugar
1 tsp vanilla extract
1 stick of softened butter
1 tbs cinnamon
1 tbs cocoa powder
First cream your butter and cream cheese (blend both together until smooth) it should look like this.
Next add in vanilla extract and powdered sugar, blend until it forms together. I scrape the edges of the bowl with a silicone spatula to ensure everything is thoroughly mixed.
Now add in the flaked coconut and mix.
Here comes the messy part! form the mixture into balls and roll in your cinnamon and cocoa mixture to fully coat the mini potatoes. It’s best to let the balls firm up in the fridge for at least thirty minutes. Once they’re firm they are a lot easier to mold! Hope you enjoy, these could definitely be made with a lot less coconut if that’s not your thing also.
