Yes you read that right, Zoodles! What the heck are zoodles you might ask? They’re noodles made from zucchini. Some might even call it Zasta (I like to think I made that up, but I didn’t). Any-who I wanted to make these for a while because I’m not a big fan of traditional spaghetti (Gasp!). My mother would not approve lol. She is a huge spaghetti fan, and would probably eat it everyday if she could. She does however, give her stamp of approval to these garlic zoodles. They are definitely a lighter but still satisfying, gluten free substitution. I used my mandoline to create the zooodles, you could also use a veggie spiralizer. You only need a few ingredients to make this meal and its so delicious! You can get a second helping with out feeling guilty, its a veggie after all. Alright so here’s what you’ll need…
Thinly sliced onion
Salt and Pepper
First wash the zucchinis and chop the ends off of them. Process the zucchinis through the mandoline to get long strands of pasta. The pieces will look like this…
Next melt a few tablespoons of butter in your pan and saute the onion and minced garlic. Add in your shrimp at this point and cook until opaque. Throw in your zoodles and season to taste. I wanted my zoodles to be somewhat al dente so I only cooked them for about five minutes.
Grab a plate and enjoy! This meal is so simple and delicious. The most time consuming part is the prep, and that is easy if you have the right tools. Let me know what you think. Would you replace your spaghetti with these zoodles?
