Pops of love

A sweet holiday deserves a sweet treat. It may not be Valentine’s Day anymore but love is still in the air! I saw this heart basket in the store one day and knew I had to use it for something. The basket looked so sweet and cute so why not fill it with sweets. Cake pops are the perfect sweets for this basket.

Basically cake pops are balls of cake dipped in chocolate and put on a stick. Yes you heard me right, cake on a stick! What a time to be alive. These treats are perfect for baby showers, birthday parties or just because you want cake on a stick. Here’s what I used to make the cake pops:

Pink candy melts

Coconut oil

Popsicle sticks

Lollipop sticks

Cream cheese frosting

Bowls for melted chocolate

Cake pop stand or styrofoam

Wax paper

The first thing you want to do is crumble your cake. You can do this by hand, but I decided to use my stand mixer

Next mix cream cheese frosting into crumbled cake one table spoon at a time.  When the crumbs form together easily and maintain shape, you’re ready to start rolling the pops into balls.

Once all your cake is rolled, pour 1 cup of candy melts into a microwaveable container and microwave  for 1 minute. Remove chocolate and stir, if it’s not completely melted return to microwave for 30 seconds at a time until fully melted. I also add a little coconut oil at this point. It should look like this

When the chocolate is ready, dip lollipop sticks into chocolate then insert two thirds of the way into the cake balls.

Place pops into the freezer for at least 20 minutes before dipping into chocolate.

Now for the fun part, dipping and decorating!

Remove pops from freezer and dip into chocolate. Make sure you use a bowl or cup that’s deep enough to fully cover the cake pop when dipped into chocolate, it will make your life so much easier!

The sky is pretty much the limit when it comes to decorating these pops. Keep them plain or elaborate, you can’t go wrong either way. Thanks for stopping by. Let me know what you think in the comments below! Have you had cake pops before? Did you like them?
