Zucchini bread

I actually had zucchini bread for the first time about 5 years ago. I have no idea why I never tried it sooner, except I probably thought it would take like a vegetable bread, instead of the sweet deliciousness that it actually tastes like. Can you imagine broccoli bread or brussel sprouts ? No thanks doesn’t sound that great lol but thankfully zucchini bread actually tastes good. Where have I been and why haven’t I had this stuff sooner?! Anyway it’s super easy to make even for me. I’m so far away from being a baker it’s ridiculous. So let’s get to what you’ll need… 

11/2 cups of all purpose flour

1/2 teaspoon salt

1 teaspoon cinnamon

1/8 teaspoon Baking powder

1/2 teaspoon Baking soda  

1/2 cup canola oil

1 cup sugar 

2 eggs

11/2 teaspoon vanilla extract 

1 pound zucchini  finely sliced

 

First thing you want to do is put your dry ingredients into your mixer and sift until they’re all fully incorporated.

 

 Chop the zucchini or throw it in the food processor. Thank God for kitchen appliances they make life so much easier!

Take that zucchini and mix it with your wet ingredients.

Now mix the wet and dry ingredients together. You can also sprinkle some sugar into the bottom of the buttered pan at this point if you wanna be fancy and add walnuts (I forgot to do this step). Pour mixture into pan.

Bake for 50 minutes at 375 degrees. Bread is done when a toothpick can be inserted and come out clean.
