Working full-time, and going to grad school part-time has left me with very little time to do all the other things I’d like to do, like workout, watch Netflix, cook fantastic meals, watch Netflix…
However, meal prepping has helped alleviate some of the morning and after work stress of figuring out what to eat or cook. When I first started meal prepping I started off slow, picking one meal of the day. Since I have to be at work at 7:30 a.m. I decided to go with breakfast making it easy to just heat something up rather than having to cook something or eat my everyday go to, cereal and by meal prepping, I might get out the door faster.
My favorite and go-to morning meal prep is egg muffins – they are simple, quick and so tasty.
- 5 whole eggs
- 3 egg whites OR you can use egg whites or egg beaters from the carton
- Veggies – I usually go with spinach, onion and tomatoes but feel free to add whatever your heart desires
- Muffin pan
- Cooking spray – I use the olive oil Pam
- Salt & pepper to taste
-Cut up your veggies – I usually dice them so they are easier to mix in with the eggs.
-Crack your eggs and whisk.
-Dump in your veggies and whisk again.
-Spray your pan and pour in veggies – This can get tricky sometimes the egg mix pours out faster than the veggies, so sometimes I have to spoon out a little egg mix for the others, but you’ll get the hang of it!
-Cook for 15-20 mins on 350 degrees F.
I usually make 10 for the week and have 2-3 each morning with a slice of toast, avocado and hot sauce!
